If one lives in a different country other than the home country (or the country of citizenship) and takes the IELTS test, which one should be considered for answering questions like - "Tell me what is the biggest festival of your country?"?

Hello,
I have a question on the Writing Test.
How to edit the writing test tasks? Should I erase the mistakes and write the corrections? Or can I just strike off? Do too many edits like strike offs make any difference in the grades?
